For this flavorful recipe for baked beans, I want to point out the words “chipotle” and “spicy” before we begin. The spiciness adds flavor, and the honey combined with the ketchup and brown sugar adds just enough sweetness.
If you can’t find these beans made by Bush’s Beans, it’s because I just made a sweep through the aisle and took them all. I panic when my pantry is low in stock of these “sweet meets spicy” beans. They are perfect straight out of the can with just a spoon standing over the sink (tested and true), or as a side dish for any dinner. After all, how can you go wrong with a company using Duke as a spokesperson?
BAKED BEANS WITH A BITE
6 to 8 slices of bacon, cut into 1/3 strips and lightly cooked
1 medium onion, chopped
1 red pepper, chopped
1 green pepper, chopped
2 cans Honey Chipotle Bush’s Baked Beans
1 tsp. mustard
2 Tbsp. ketchup
1 tsp. Worcestershire sauce
¼ cup brown sugar
1 Tbsp. honey
¼ cup spicy BBQ sauce
In a cast-iron skillet, sauté the bacon strips until just slightly done. Remove to the side. Reserve the bacon grease to sauté the onions and peppers. Salt and pepper the onions and peppers and cook until the onions are translucent. Add all of the remaining ingredients and stir. Lay the strips of bacon on top of the bean mixture and cook for 2 hours at 325 degrees.
