Diane Taveau, a local resident and franchisee, hopes to have the fast casual restaurant opened in University Centre — at 1120 W. State of Franklin Road, across from East Tennessee State University — in the fall.
“Its truly salad-centric,” Taveau said of her eatery. “There’s nothing like it here. You can get a healthy meal for under $10.”
She said the menu will offer “something for the entire family.” Saladworks was founded in 1986, and specializes in custom salads, wraps and soups.
“We will cater to all lifestyles,” Taveau said. “The whole family can come in and have a great meal.”
Taveau and her family located to the Johnson City area more than a year ago. Her husband, Dr. Jon Taveau, is a neurosurgeon at Holston Valley Medical Center, and she is an actor now appearing in the Jonesborough Repertory Theater’s production of “Momma Mia!”
The franchisee said her first experience with Saladworks came a few years ago when she lived in Philadelphia.
“I ate there three or four times a week,” Taveau said.
She wanted to bring that dining experience to her new home.
“I’m doing it for selfish reasons,” she said. “I missed it.”
Taveau’s restaurant will be the first Saladworks franchise in Tennessee. She plans to open other locations in Bristol and Kingsport.
All salads at the restaurant are made to order one at a time with fresh vegetables and fruits. Customers can create their own salads, or select from a number of signature and seasonal salads on the menu.
Saladworks is headquartered in Pennsylvania, and has more than 100 locations in 13 states and two other countries.
